PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control Observation: Cooked chicken in reach in cooler with a temp of 54*. Product discarded. Management said cooler door may have been left propped open last night. Other items in reach in not potentially hazardous (taco shells, margarine, etc.) Temperature is dropping in reach in cooler during inspection. Recommended adding to end of day checklist to ensure doors are closed.
