- 4-302.14 - --There were no test strips available to test chlorine sanitizer levels.
- KDA_3_30211A1b - --In small cooler, south of grill, a package of raw bacon was setting on top of RTE flour tortillas. COS - bacon moved so another area.
- KDA_3_50116A2 - --On counter top, a container of porkies (RTE sausage and bread dough) was 67F. Porkies had been out of cooler for 3 hours, per owner. COS - placed in small chest freezer for quick cooling.
- KDA_4_60111A - --In donut prep area, 4 metal whisks and 1 metal utensil, stored as clean, had dried food debris. COS - placed at 3-vat sink for cleaning.
- KDA_4_60111C - --There is a build up of dried food debris, dust, and flour on the all the of the equipment in donut prep area. The plastic containers storing flour, sugar, icing had a build up of dried food debris on lids and handles. The proofer had a build up of dried food debris on handles, doors and interior. The fan next to the donut display cabinet has a build up of dust on fan blades. There is a build up of grease and dust on grill, stove and vent hood in north prep area. There is mold on shelves of Coke cooler.
- KDA_5_20515B - --Both restrooms have leaks in water lines causing standing water on the floors. Owner stated they have a repairman scheduled to come in for repair.
- KDA_6_20211A - --One light bulb above donut prep area is not shielded.
- KDA_6_20215A3 - --The back door had a 1/2 inch gap along the bottom of the door.
- KDA_6_30112 - --The hand sink in donut prep area did not have hand towels available. Corrected on site (COS) - paper towels provided.
- KDA_6_50111 - --The tape and foil on the HVAC vent above donut prep table is hanging loose. The tape holding plastic covering on exhaust above donut fyer is hanging loose. There are a few floor tiles missing in food prep area exposing raw wood.
- KDA_6_501114A - --In the back storage room, there is an accumulation of old/unused equipment.
- KDA_6_50112A - --The food prep area floors had a build up of dried food debris. There is dust and cobwebs throughout establishment
- KDA_Defacto - --Cold Holding: Small cooler (south of grill) - 38.8F ambient. Small refrigerator (west of grill) - 46F ambient. NOTE: Only raw shelled eggs stored in this cooler. Freezers ok. --Hot Holding: Stove top - peppered gravy 149F.
