KDA_6_30112 - --There were no disposable towels available at the handsink. COS- PIC restocked.

KDA_7_10211 - --There was a gray bucket for wiping cloths in the kitchen containing a Chlorine solution that was not labeled. COS- PIC correctly labeled.
KDA_7_20111A - --There was a sanitizer wiping bucket stored directly next to a box of single service oyster crackers on a shelf at the window. COS- PIC moved the chemical bucket to a different area.
KDA_8_30411A - --The license is posted in the office area where it is not conspicuous to the consumer.

PIC described process for manual dish washing and for salsa containers, Chlorine test strips were provided. --shredded lettuce 41 (reach in cooler) diced tomatoes 41 (cold hold on line) chicken 40 (walk in cooler) --taco meat 164 (steam table 1) beans 146 (steam table 2) --There are several containers of salsa (made at central kitchen) in the walk in cooler without any date marking. Inspector was unable to identify shelf life since no variance was available. --There is a pest control company contracted, no paperwork provided. --There was a working spray bottle in the warewashing area labeled "Fly Spray". PIC stated the chemical was distributed from the central kitchen and did not have any of the original packaging. Inspector could not identify if the product was for commercial use. --There was container of cheese sauce in the walk in cooler that measured at 95F. PIC stated the item was prepared 3 hours prior and was placed immediately in the walk in cooler for cooling. Educated staff on proper and effective cooling methods. PIC moved the cheese sauce to an ice hold for additional cooling. --There was no variance provided for the salsa. Inspector received documentation of necessary testing of the product to leave out at room temperature.
