  • R/4.4 Two door seals on the upright refrigerator, in the kitchen, are torn. Seals shall be intact.
  • *3.4 - Boiled eggs, yogurt, skim and 2% milk are all cold holding at improper temperatures. Potentially hazardous foods shall be maintained at 41°F or below to prevent possible growth of harmful bacteria which may cause a foodborne illness. Hard boiled eggs- 50°F, are kept on ice with a dome over them, but ice had melted and was not touching bottom of dish where eggs are held.
  • Milk is normally dispensed from a single dispenser, but they ran out. During this inspection, skim and 2% milk were in pitchers. 2% milk had a freezer insert, but milk had an internal temperature of 54°F. Suggested cook discard this milk and start with a new pitcher and a new frozen insert from freezer. Skim milk was being held in a metal-type pitcher that reportedly had been placed in freezer. Skim milk had an internal temperature of 46°F. Yogurt had an internal temperature of 45°F and is held on the counter in a chill pan from the freezer. Discussed using only a single layer of yogurt in container to help keep yogurt colder. Cook reportedly will discard milk and eggs and replace with cold product from upright refrigerator. Yogurt was placed in single layer in chill pan.
  • *4.2 - No long stem thermometer was available during this inspection. Provide a food temperature measuring device in order to determine proper cooking and/or holding temperatures of foods. Discussed with cook the importance of making sure temperatures are correct.
  • 3.2 - Observed apples with stickers still on them in the serving area. Produce shall be washed thoroughly prior to serving or preparation. A sign was placed on the box of fruit that it needs to be washed before serving.

  • *4.5/4.6 Long stem thermometer is soiled. Food contact surfaces shall be clean to sight and touch. Clean and sanitize food contact surface.
  • 4.2 Provide a corresponding sanitizer test paper kit in order to measure sanitizer concentration.
  • C/*6.2/2.4 Soap dispenser is empty at handwashing sink. Provide an adequate supply of soap in order to facilitate proper hand washing. A bar of soap was provided today.

  • */C4.1 Inaccurate long stem probe thermometer registered 8°F in ice water. Thermometers shall be accurate within +/-2°F in order to determine proper cooking/holding temperatures of food. This thermometer was also damaged on the tip. Thermometer was discarded at time of inspection. Note: Another long stem thermometer was found in upright cooler. This thermometer is accurate.
  • *4.5/4.6 Long stem thermometer in upright cooler is soiled. Food contact surfaces shall be clean to sight and touch. Clean and sanitize food contact surface.
  • 4.2 Provide a corresponding sanitizer test paper kit in order to measure sanitizer concentration.
  • C/*6.2/2.4 No paper soap available at the kitchen hand sink. Provide an adequate supply of soap in order to facilitate proper hand washing.
  • 3.2 Observed stickers on apples available for consumer self-service. Apples shall be thoroughly washed prior to serving. Remove stickers and wash apples. Also provide a food shield or cover apples to prevent possible consumer contamination during display.

  • Hold potentially hazardous foods at 41°F and below to prevent the growth of organisms
  • 4.4 The ambient air temperature in the small counter top refrigerator was holding at 44°F. Ambient air temperature shall be well below 41°F in order to hold foods at 41°F and below. Adjust the temperature of the unit. Replace the unit if it can't hold proper temperatures. All equipment shall be commercial NSF or ETL listed items.
  • 4.4 Two door seals on the upright refrigerator, in the kitchen, are torn. Replace these. Equipment shall be in good repair and condition.
