- C/*3.4 Observed the following cut deli meats held beyond 7 days:
- -12/19 cappicola
- -12/13 turkey
- Ready-to-eat, potentially hazardous foods (PHFs) shall be dated the day of opening or preparation and used or discarded within 7 days. Reportedly, these meats were pulled from the freezer yesterday. PIC re-dated the deli meats today.
- C/R/*3.2 Observed packages of raw bacon stored above ready-to-eat deli meats in the deli cooler. Store raw animal foods separate from and below ready-to-eat foods in order to prevent possible cross-contamination.
- C/*3.2 Observed a can of Marie Callender's chicken pot pie, on the retail shelf, with a dented seal. Store damaged canned goods in a separate designated area for return/credit.
- 6.4 Clean the floor under shelving in the walk-in freezer in order to remove food spill.
- NOTE: Walk-in cooler was malfunctioning due to a blown breaker. PHFs were already relocated to the Beer Cave, with an ambient air temperature of 37°F, until repairs are made. Repair personnel was on-site.
- NOTE: Observed commercially made Potato Salad with an expiration date of 12/26. Check and rotate stock.
- NOTE: Observed Ortho Home Defense stored under the 3-compartment sink. This spray is not approved for use in areas of food/equipment. Use pest control devices/sprays that are safe for use around food/equipment.
- -1 accurate long stem thermometer available.
- -Observed proper labeling/ingredient stickers on sandwiches packaged for self-service.
- -Observed proper chemical storage.

- C/*3.4 The tornados were hot holding at 125°F. Hold potentially hazardous foods hot at 135°F and above to limit the growth of organisms. The unit was adjusted and the temperature was increased.
- *3.2 Packages of raw Superior bacon are stored next to Ekrich Franks and Bologna and above cheese slices. Store raw animal foods separate and below ready-to-eat foods to prevent possible cross contamination.
