Ready-to-eat, potentially hazardous foods (PHFs) shall be dated the day of opening or preparation and used or discarded within 7 days. Reportedly, these meats were pulled from the freezer yesterday. PIC re-dated the deli meats today.
C/R/*3.2 Observed packages of raw bacon stored above ready-to-eat deli meats in the deli cooler. Store raw animal foods separate from and below ready-to-eat foods in order to prevent possible cross-contamination.
C/*3.2 Observed a can of Marie Callender's chicken pot pie, on the retail shelf, with a dented seal. Store damaged canned goods in a separate designated area for return/credit.
6.4 Clean the floor under shelving in the walk-in freezer in order to remove food spill.
NOTE: Walk-in cooler was malfunctioning due to a blown breaker. PHFs were already relocated to the Beer Cave, with an ambient air temperature of 37°F, until repairs are made. Repair personnel was on-site.
NOTE: Observed commercially made Potato Salad with an expiration date of 12/26. Check and rotate stock.
NOTE: Observed Ortho Home Defense stored under the 3-compartment sink. This spray is not approved for use in areas of food/equipment. Use pest control devices/sprays that are safe for use around food/equipment.
