Discussed properly cooling of foods. Foods shall be cooled from 135-70°F within two hours and from 135°F-41°F within a total of six hours.
One accurate thin diameter temperature measuring device was available for use.
Reportedly raw eggs were used for baking.
Produce was properly washed during this inspection.
Foods were followed during transport to the Imagination Station center on East Lafayette road. Mushroom sloppy Joe pre-transport was holding at 190°F, and post transport was holding at 189°F.
  • 6.4 Clean the floor/wall junctures throughout as needed.
  • R/6.2 Observed the employee restroom contained 15 foot-candles of lighting, provide 20 foot-candles of lighting above the hand sink. Also, repair the non-functioning light fixture under the hood, to provide 50 foot0candles of lighting.
  • 4.5 Clean the door seal on the True refrigerator/freezer unit by the door which is soiled.
  • 4.4 Repair the damaged door seal on the refrigeration unit in the front serving area, and the interior of the milk cooler surface which is rusty, contains pooling water, and ice accumulation, to provide a cleanable surface.
  • 4.8 Store the oven rack six inches of the floor to facilitate cleaning and to prevent contamination.
  • Notes: Infant refrigerator contained a temperature of 40°F.

C/DATE MARKING: Observed three containers of cream cheese were lacking date marking. Foods shall be dated the day of opening an shall be used or discarded in seven calendar days. These food items were discarded today.
Discussed raw egg storage. Reportedly raw eggs were used for baking.
Discussed with PIC to mark the expiration date on the container for oatmeal infant cereal, if remove from the original container.
  • R/6.4 Clean or repair the floor surface under the three-vat sink and behind the grease trap, to provide a cleanable surface.
  • R/5.1 Repair the leaky hand sink faucet. Plumbing shall be maintained in a state of good repair.
  • R/6.4 Repair damaged coving by the hand sink, to provide a cleanable surface.
  • 6.1 Observed air gaps surrounding the side door. Repair the door to eliminate air gaps and to prevent pest entry.
  • 6.2 Observed the employee restroom contained 13 foot-candles of lighting, provide 20 foot-candles of lighting above the hand sink.
  • 4.1 Provide an accurte thermometer in the True refrigerator/freezer by the door the unit which is holding at 19°F, but thermometers are reading 38°F, and 40°F.
  • Notes: Infant refrigerator contained a temperature of 38°F.

Discussed raw eggs and fully cooking menu items for the children.
  • R/6.4 Clean or repair the floor surface under the three-vat sink and behind the grease trap, to provide a cleanable surface.
  • C/4.8 Store the racks for the hot box six inches off the floor to facilitate cleaning and to prevent contamination.
  • 5.1 Repair the leaky handsink faucet. Plumbing shall be maintained in a state of good repair.
  • 6.4 Repair damaged coving by the hand sink, to provide a cleanable surface.
  • Notes: Discussed open doors in FSO.
  • Infant refrigerator contained a temperature of 43°F. Discussed adjusting this unit to maintain 41°F and below.
