Foods are reportedly cooled under refrigeration, to assure 135°F-70°F is achieved in two hours and 135°F-41°F is achieved within a total of 6 hours.
PROTECTION FROM CONTAMINATION: Observed a bag of shredded cheddar, and mozzarella cheese contained moldlike growth. Foods shall be safe wholesome and unadulterated. This food product was discarded.
R/DATE MARKING: Observed the salami was dated 12/17/11. Foods shall be dated the day of operation and shall be used or discarded in seven calendar days. PIC was asked to discard this food item.

DATE MARKING: Observed the Cole slaw was dated 6/7/11 and contained a sell-by/use-by date of 5/29/11, also the sausage links were lacking date marking. Foods shall be dated the day of preparation and shall be used or discarded in seven calendar days. These foods was properly date marked, or discarded.
HOLDING: White American cheese was holding at 44-47°F. Foods shall be maintained at 41°F and below to limit the growth of organisms. This unit was adjusted today.
TEMPERATURE MEASURING DEVICE: Temperature measuring device was reading 42°F in an ice bath. Temperature measuring device shall be accurate within +/-2°F to monitor temperatures of foods. This device was calibrated today.
