-Observed proper date marking on opened hot dogs.
-Observed proper thawing of French fries under refrigeration.
-Observed proper glove use to avoid bare hand contact with ready-to-eat foods.
-Observed proper chemical storage and labeling.

- 6.2 Observed the light above the steamer was non-functioning. Repair this area, to provide lighting as specified in OAC 3717.
- 4.4 Repair the damaged door seal on the bottom door holding the water, to facilitate with temperature maintenance.
- 4.4 Walk-in freezer condenser is leaking water in to a bucket and on to the floor. Repair this area. Reportedly, refrigeration repair man was contact for repairs.
- NOTES: Observed this operation is using HG200 Gel Automatic Preventative Drain Maintenance System for the plumbing under the three vat sink. A letter was sent to Medina City Schools from the Medina County Sanitary Engineer dated 12/21/09 regarding the use of this chemical. Please refer to this letter.
- Temperatures taken today: Sausage 173°F, American Cheese 37°F, Walk-in cooler 41°F, Traulsen unit 33°F.
- Discussed unused soup kettle with PIC. Unused equipment shall be removed from premises.

- Discussed with PIC foods shall be date marked and used within seven calendar days.
- New walk-in freezer door was added to the unit. Reportedly, bare wood currently exposed will be covered with a stainless steel surface. Equipment shall be cleanable.
- Reportedly, all elementary schools in the Medina City School District are serving breakfast daily. Breakfast is served at 8:30am.
