4/25/2012 | Standard 1 | CHEMICAL: Observed a box of chaffing fuel stored above and beside plastic containers in the back room. Store toxic chemicals separate from and below food and equipment in order to prevent possible contamination. PIC relocated the chaffing fuel.
-Observed proper date marking.
-Observed proper chemical labeling.
-Observed proper glove use to prevent bare hand contact.
-PIC reported proper thawing, cooling, and reheating procedures.
-2 accurate long stem thermometers were available for use.

- *4.1/2.4 One of the three temperature measuring devices was reading 24°F while in the ice bath. This device was calibrated today. Temperature measuring devices shall be accurate within +/-2°F to monitor temperature of potentially hazardous foods.
- R/6.4 The floor under the rear freezer was chipped and damaged. Repair this area to provide a cleanable surface.
- R/6.4 Clean the soiled/stained floor surfaces under equipment as needed.

- During the standard inspection on 3/23/10, this inspector observed meals being picked up an taken to another building.
- Reportedly, meals for a charge are provided to the C-FIT program in the building next store. Currently, the meals are no longer packed up and transported to the adjoining building, now students from the C-FIT program come over to the cafeteria to pick-up their lunches. Therefore no change in the license risk level will be applied for the 2012-2013 licensing season. Current food practices were discussed today with the PIC, regarding reheating soups for the school staff.

- *3.4/4.4/4.1 Observed during this inspection, the rear refrigeration unit contained an air temperature of 45°F, the thermometers on this unit were reading 38°F, and 40°F. The following foods in the same unit were holding at improper temperatures: - Mixed shredded cheese 43°F - Egg mix 44°F - Mozzarella cheese 48.6°F
- - American Cheese 45°F - Cheddar cheese 46°F.
- Refrigeration unit and foods shall be maintained at 41°F and below. Discard any food items above 45°F and above and provide an accurate thermometer. Repair man was on-site for repairs.
- *3.4 Observed pizzas on the rolling rack were holding at 37°F-51°F and 39°F-53°F. Foods can be slacked at room temperature provided the food product maintains 41°F and below. Relocate this foods item to a refrigeration/freezer unit.
- *4.5/4.6 Temperature measuring device was stored soiled. Temperature measuring device shall be washed, rinsed, and sanitized, prior to use and storage.

Therefore no change in the license risk level was applied for the 2011-
- 2012 licensing season. Current food practices were discussed today with the PIC, regarding the C-FIT students. Reportedly lunches are still delivered in a cooler to the students. This locations Risk level will be changed to a risk level 4 for the 2012-2013 licensing because of catering practices.
