PIC moved the medication to the bottom shelf of the cooler and agreed to place it in a container for added protection.
C/*3.2 Observed a dented can of peaches (on the seam) in the dry storage area. Do not use canned goods that are dented on the seam in order to prevent possible contamination. Store in a separate designated area for return/credit.

C/*4.4 Observed quat sanitizer in the 3 compartment sink at a concentration of 400ppm. Maintain quat sanitizer at 200ppm (per manufacturers directions) in order to effectively sanitize without leaving a toxic residue.
*4.2 Observed 1 inaccurate long stem thermometer. Thermometer was reading 26°F in ice bath. Calibrate thermometer to read
32°F +/- 2°F in ice bath in order to properly monitor food temperatures. 2 other accurate long stem thermometers were available for use.
-Observed proper chemical storage and labeling.
-PIC displayed knowledge of proper thawing procedures, in the refrigerator.
NOTE: Discussed the need for an indirectly drained prep sink if operation wants to wash and cut fresh produce. Currently, the operation uses canned and pre-packaged/washed produce.
