  • 3.1- Can of clams was dented on the bottom seam. Do not use canned goods that are deeply dented to prevent possible contamination.
  • 4.4- Interior of four door freezer damaged and reportedly part is on order.
  • 5.1- Mop sink is leaking from hose. Plumbing shall be in good repair.
  • 4.4- Dessert cooler shelving is chipping. Make any needed repairs to facilitate cleaning and prevent possible contamination.
  • 4.4- Gaskets on True freezer by fryer and reach-in cooler under plates are torn. Equipment shall be in good repair.
  • 4.5- Gaskets on the keg cooler are dirty. Clean this.
  • 4.5- Ice build-up inside of the martini glass freezer. Defrost this.
1/18/2012Standard2HOT HOLDING- Prime rib in alto sham hot holding at 76°F. Potentially hazardous foods shall maintain hot at 135°F and above to prevent bacteria growth. Prime rib was relocated to the oven.
DATE MARKING- Cheesecake and carrot cake were not date marked. Ready-to-eat potentially hazardous foods shall be date marked when opened or prepared and consumed within seven days. These desserts were date marked during this inspection.
CHEMICAL- Blue liquid labeled sanitizer was actually glass cleaner. Properly labeled all toxic chemicals to prevent confusion or misuse. Spray bottle was properly labeled during this inspection.
TEMPERATURE MEASURING DEVICE- Long stem thermometer reading 20°F in an ice bath. Calibrate to 32°F to accurately monitor potentially hazardous food temperatures. Thermometer was calibrated during this inspection.
CONSUMER ADVISORY- Consumer advisory is available on the menu but does not indicated food which it pertains too.
Disclose food that are undercooked (*).
  • 6.4 The floor edges below the kitchen hand sink and behind the True freezer is soiled. Clean these.
  • 6.4 Floor tile in front of the steamer is damaged. Repair this.
  • 4.4 The ambient air temperature was holding at 42°F in the Beverage Air three door reach-in cooler. Ambient air temperature needs to be below 41°F in order to hold potentially hazardous foods at 41°F and below. The PIC corrected this by adjusting the unit.
  • 4.5 The casters on the kitchen equipment is soiled. Clean these.
  • 4.5 The interior vents in the Beverage Air three door reach-in cooler were dusty. Clean these.
  • 6.4 Observed flying insects in the bar area. Control the presence of pests.
7/27/2011Standard 1* COLD HOLDING: Potentially hazardous foods were holding at improper temperatures. See temperature log. Potentially hazardous foods and refrigeration units holding them shall be maintained at 41°F and below to limit the growth of organisms. The PIC adjusted the temperature gauge in the Beverage Air unit and the ambient air temperature went to
40°F.
R/* CONSUMER ADVISORY: No consumer advisory or disclosure was available on the menu. PIC was asked to provide this. Reportedly, a new menu is being printed in August.
PROTECTION FROM CONTAMINATION: A container of raw beef scraps was stored on a shelf above ready-to-eat foods in the walk-in cooler. Relocate the raw beef to prevent possible cross contamination. PIC corrected.
TEMPERATURE MEASURING DEVICE: Provide a long stem thermometer ranging from 0°F to 220°F in order to measure food temperatures.
  • 4.5 The door seal on the True freezer is soiled. Clean this.
  • R/3.2 Label liquid food squeeze and spray bottles with the name of the food.
  • 4.4 The following areas were damaged:
  • - R/both door seals on the two door True unit
  • - R/left door seal on the True two door flip top unit
  • - R/two door seals on the Beverage Air three door reach-in unit
  • - R/door seal on the walk-in cooler door
  • - door seal on the dessert reach-in unit (continental unit)
  • Repair or replace these areas.
