    --Tuna salad in the kitchen prep. cooler has an internal temp. at 45*F. instead of the required 41*F. or below. Item discarded at this inspection. Reviewed with the PIC. Corrected.
  • Cooling, Heating, & Holding Capacities (46.611)
    --Kitchen prep. cooler has an ambient air temp. ( bottom section ) at approx. 45*F. Unit must cold hold PHF at/below 41*F. Top section of this unit is approx. 35*F. Service person phoned during this inspection.
  • Cutting Surfaces Maintained (46.672)
    --Observed two white deeply scored cutting boards on the kitchen prep. cooler are not resurfaced or discarded as required. Also several dish washer racks are badly damaged/cracked and are no longer smooth and easily cleanable.
  • Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
    --Observed a build up of dust/debris on the two fan covers of the 4 door Raetone kitchen refrigerator. Also observed a build up of liquid on the bottom shelf of the first floor bar keg cooler.
  • Plumbing Facilities in Good Repair, Cross Connection Prohibited, Scheduled Inspections, Cleaning Water Reservoirs (46.825(b)-(e))
    --Employee restroom toilet attached to the kitchen area does not flush properly.
  • Light Bulb Protective Shielding (46.922(a))
    --The kitchen fluorescent light fixture above the butcher block table is not shielded.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --Observed a sagging ceiling tile in the kitchen above the butcher block table. No water leaking at this time.
