Discussed ROP process. Establishment will not be doing any ROP until HACCP Plans have been approved. Establishment indicated they use freezing as second barrier for this process. Complete HACCP plans for ROP process, once approved by Peoria City/County Health Department has been given, establishment may start process. A copy of IL State food safety code Subpart K: Reduced Oxygen Packaging Section 750.2000-2080 was left with establishment. Chef also indicated they will not need a variance for outside smoker. Should the outside smoker need to be used, a variance will be required. Variances may take up to 10 business days to complete. HACCP: Discussed and provided information on Hand Washing, Employee personal items, Date Marking, Potentially Hazardous foods. Frozen foods frozen Note: A smoker has been added outside by the patio. During inspection it was observed no hand washing station was set up at the smoker, a temporary station has been set up, this shall be set up any time smoker is in use. A variance is required in order to operate this smoker. A permanent hand wash station or portable unit capable of producing hot and cold running water will be required inorder to continue to operate.
