Establishment has been given final inspection to operate under the guidelines of Chapter 10, Food Safety, of the Peoria County Code.
Extended dining room is still under construction. Construction of dining room does on the hinder or interfere will food production within the kitchen.
Extensive cleaning of the kitchen is needed with special attention to all food and non-food contact surfaces, walls, floors, and ceilings.

Large prep cooler has ambient temperature of 48 F. A sufficient number of refrigeration units capable of holding foods at the proper cold temperatures shall be provided and conveniently located in the facility.

Remove paper table cloths from dining room table tops. Multi-use equipment and utensils shall be made and repaired with safe, non-toxic materials, including finishing materials that are corrosion resistant, non-absorbent, smooth, easily cleanable, and durable under conditions of normal use.
- Non-food contact surfaces designed, constructed, maintained, installed, located.
Cardboard found lining the dry storage shelves. Removed cardboard. Multi-use equipment and utensils shall be made and repaired with safe, non-toxic materials, including finishing materials that is corrosion resistant, non-absorbent, smooth, easily cleanable, and durable under conditions of normal use.
- Non-food contact surfaces clean
The following non-food contact surfaces are soiled: 1. exterior of seasoning and food storage containers, 2. exterior of grills and stove, 3. gaskets of coolers and refrigerators. Thoroughly wash and clean all non-food contact surfaces.
- Storage/handling of clean equipment, utensils
Silverware present on dining room table tops are not wrapped or covered. Glasses and cups shall be inverted, and knives, forks and spoons shall be pre wrapped or otherwise covered, if tables are preset.
- Walls, ceilings, and attached equipment, properly constructed, clean
Walls throughout kitchen are soiled. Ceiling tiles are missing from the ceiling in the kitchen. Clean all walls thoroughly and replace ceiling tiles.
