Frozen foods were frozen.

Final inspection noted that dumpster must be placed on concrete.  Concrete blocks were observed and are ready to be put in place.  Owner is planning on having them installed before next inspection.
  • Critical: Cross-contamination, equipment, personnel, storage
    Raw eggs stored over juice jugs in milk fridge.  Corrected by moving eggs to bottom shelf.
    Food that is not subject to further washing or cooking before being served shall be stored in a way that protects it against cross-contamination from food that requires washing or cooking.
  • Critical: Toxic items properly stored
    Bottles of soda stored beneath Clorox and other cleaners.  Corrected by storing all drink items away from chemicals used for cleaning.
    Poisonous or toxic materials necessary for the maintenance of the establishment shall not be stored above or intermingled with food, food equipment, utensils, or single-service articles.

Establishment has been given final approval to operate under the guidelines of Chapter 10, Food Safety, of the Peoria County Code.

A temporary handsink must be used outside at all times the smoker is in use.
  • Plumbing installed and maintained
    Mop sink hot water does not turn off all the way, so is shut off below the sink.
  • Outside storage area clean, enclosure properly constructed
    Dumpster is located on gravel and grass.
    Garbage and refuse containers and compactor systems located outside shall be stored on or above a smooth, non-absorbent, easily cleanable material, such as concrete or machine-laid asphalt, graded to prevent accumulation of liquid waste.
  • Lighting provided as required. Fixtures shielded
    Light in kitchen not completely shielded.
