Milked temped at 52F. Per operator milk is usually stored with blue ice and ice around the cartons. Milk moved to walk in to cool. Ensure product is kept at 40F or below. Corrected on site.
[2] Food contact surfaces of equipment and utensils clean; free of abrasives; detergents Observed tongs used to serve hot dogs beneath the hot rollers. Per operator tongs are switched 2 times a day. Tongs must be stored in a cleanable food container or on a single service paper that is thrown out when the tongs are changed. Tongs must be cleaned and sanitized at least every 4 hours.

OK to operate w/ conditions listed:- The garbage compactor is leaking hydraulic oil onto the garbage pad. Water from rain or employee wash down operations is washing the leaking oil into the storm drain system. Either repair/replace the leaking dumpster or install a berm to contain any wash down water on the pad (to be removed absorbant; vacuum or other methods) or reinstall the garbage pad and properly slope to the sewer drain on the back side of the pad.
