Dishwasher malfunctioned today; repairs are scheduled for today 09/19/14. Facility will need to repair to maintain 50-100ppm chlorine.Facility will need to use a three-compartment sink set-up for warewashing until repairs complete. Facility has two different (2) compartment sinks. Reviewed set-up of using sinks until dishwasher repaired.

The following was observed at the time of inspection:Hot-holding checked good; pork cooking at 195F.Cold-holding checked @ salmon at 38F; cheese at 39F; pastas at 35-38F.Eggplant from the night before checked at 43-45F; product voluntarily discarded. Please ensure products are sliced small enough to properly cool. Please use FDA cooling formula to ensure products reach 70F within 2 hours and from 70F to 40F within 4 hours. All products must reach 40F within no more than 6 hours. Handsinks checked stocked and functional; reviewed handwashing.Reviewed employee illness policies and symptoms to be aware of.Restroom checked stocked and clean.
