Bottom row of scoops in the bulk candy bins are tethered to the bins. Shorten the tether so that the scoops cannot come into contact with the floor to prevent potential contamination.Hot dogs tongs are stored at room temperature and per operator are cleaned nightly; ensure these are washed; rinsed and sanitized at least every 4 hours to prevent bacterial growth.

Please ensure that sanitizer is prepared (proper temp) per manufacturers instruction to be the most effective. Sanitizer in 3-comp sink measured between 200-400ppm; but water was very hot. Test strips are available.

Quat sanitizer recorded at 200 ppm at sanitizer bucket. Hot dog hot holding case recorded at 170 F. Hot dog temped at 125 F. Do increase temperature of hot holding hot dog case and monitor temperatures to be above 140 F. Food thermometer on site. Proper icescoop and popcorn scoop storage.Dipper well functional and observed clean.Bathrooms observed clean and stocked.Reviewed exclusion policy for ill employees. Operator and CFPM knows when to exclude ill employees. Employees with any vomiting or diarrhea must be excluded for at least 48 hours from the time of the last incident. No bare hand contact to ready to eat foods. Glove use is required.
