    No repeat violations noted at time of reinspections with exception of the missing test strips as noted above. Operator stated he will purchase this week when he picks up his order for the store.Freezers have appropriate thermometer and temperatures are measuring 0F or below. Per f'real manufacturer; Milkshake cups can be stored at 0F-6F for product freshness and safety.Operator indicated that stamp for the ice bags has been ordered and will be put into use upon arrival.Ice machine clean and sanitized and scoops properly stored.Light over ice machine properly shielded.Operator is maintaining temperture logs for refrigerators and freezers.Employee food removed from walk-in cooler and separated from customer food for sale.Product in dairy case is properly organized and rotated with no expired dates. Maintaining a log of all product pulled due to damage or expiration.Operator will continue to stock restroom with paper towel and soap for restroom or consider installing an air dryer for drying hands.Multiple pieces of equipment removed back store room.     Found relish at the condiment station that was 66F and coagulated. Per the operator; it is changed about every 2 days. **Corrected on site. Voluntarily discarded.Food that it is not maintained at 40F or below must changed out every 4 hours or less.

    Observed dairy products that were 1-4 months past the expiration dateObserved candies and other non-TCS products there were 4-6 months over the expiration dates Observed deli meats that were one and two months past the expiration date.All these foods items must be removed from sale to prevent contamination. Facility must develop a program to check the expiration dates of food items and develop a FIFO system to ensure products are not being sold past their expiration dates.Jalapenos in the walk-in in a rusty can. Food must be transferred to a food grade container and properly stored.

    Multiple repeat violations from previous years' inspections including temperature issues and expiration dates.Facility will be required to maintain 3X / day temperature logs until instructed to stop at opening; midday and closing to ensure proper function of all freezer and refrigeration units.Forms will be dropped off on February 6th; 2015 for facility to begin temp logs.Facility will develop a plan to systematically check all expiration dates and appropriately rotate product to minimize/mitigate risk to public health.Facility will report any issues with either of these systems to the Health Department within 48 hours as non-compliance or additional violations of either can result in permit suspension.Walk-in fridge: 38F; 2-door freezer -20F; top-load feezer (product at 1.4F) Milkshake freezer at 18F.Facility will provide a letter or document from the manufacturer or distributor that states product may be held above 0F.3-compartment sink available for use to sanitize coffee pots.Hot/cold water and proper ventilation in restroom.
