General Comments that relate to this Inspection This mobile food truck prepares and serves Mexican food: tacos; burritoes; quesadillas and tortas. All drinks will be prepackaged. Greyblack water tank is approx. 40 gallons and fresh water tank approx. 30 gallons.All food preparation shall be done at the servicing area or on moble food truck. Absolutely no preparation; cooking or food is to be allowed to be stored on the mobile food truck when the mobile is parked in a residential location at the end of business day. The servicing area for "Espinozas" is One World Kitchen. This servicing area is equipped to handle to handle the required capacities for the mobile food truck.All food will be served on disposable ware and a garbage can provided.This mobile has only one food safety manager. No other employees are s cheduled to take or has failed the food safety course for initial certification. A separate food handler and a separate cashier will be working on mobile truck.Notes:Walk in cooler noted at 34 F. Dry storage checked OK. Reviewed with operators route path and no bare hand contact to ready to eat foods. This permitted mobile must use servicing area daily. Handsink checked OK and properly stocked.Reach in cold holding units noted at 34 F inside mobile.Steam table checked OK.2 compartment sink observed clean; both hot and cold running water under mechanical pressure. OK to operate at new servicing area.
