Cooler is not working and will need to be cleaned and sanitized to maintain sanitary conditions. When door to cooler was opened the insidie of the cooler has a unpleasant odor. Correct by the end of 6/18/14.

There is some mold growth on the drop chute of the ice machine inside the ice machine bin - Clean and maintain clean. The bin must be dumped; washed with soap and water; rinsed out and then sanitized prior to refilling for use.

No test strips available to testing quatenary ammonia sanitizer makeup water. Currently the operator only has bleach (chlorine) based strips. The test strip used must be appropriate for the chemical in use. Provide. Make-up quatenary ammonia sanitizer at 200ppm or pursuant to manufacturer's labeled instructions. Makeup bleach based sanitizer water at 50-100ppm.
