Thawed product is added to cooked potato product and then mixed in plastic tubs. Burritos are then rolled and placed in plastic bags. Left over mix in tubs and burritos in bags are placed in refrigerator.During preparation; mixed product was found to be at 70F. Since product amount is small; it is likely that it will cool down to 40F within 4 hours; however; no monitoring was in place. Discussed issue with CFM and suggested that she check the product in about 2 hours (for a total of 3 hours) to ensure that it had reached 40F. If not; suggested alternatives - cooling with ice baths; cooling in freezer; using metal pans; leaving burritos out of the bag until cooled; etc. Manager will monitor to ensure that no product remains out of temperature more than 4 hours and will also contact Jacksons corporation and check with their food safety manager.
