    General Comments;-front hand sink stocked-discussed new food regulations and no bare hand contact with ready-to-eat foods - facility currently using gloves and tongs for hot dog preparation service-no hot holding observed at time of inspection - operator aware of proper cooking/holding temperatures-stem thermometer on-site. Operator able to demonstrate proper calibration and use-back 2-door reach-in at 38F -hot dogs 41F-walk-in freezer - all food products observed frozen-three-comp. sink available for wash; rinse; sanitize; operator was able to demonstrate how to fill sanitizer compartment - ensure chemical test kits are obtained to verify quat sanitizer at 200-400 ppm quat-wiping cloth sanitizer checked at 400 ppm quat-restroom stocked with soap and paper towels-ensure all hand sinks are posted with handwashing signs-discussed employee health policies. Ensure employees with gastrointestinal symptoms (vomiting; diarrhea; jaundice) are excluded for the duration of illness and 48 hours after symptoms stop.
