The hot holding case did not have a thermometer and the facility did not have a thermometer on hand to check product temperatures. Ensure a thermometer is provided to check hot holding temperatures. This violation was noted on the 02/11/15 routine inspection and the operator was given until 02/13/15 to correct the violation.-The operater said they had to order a thermometer and it will be in next week. -Hot dogs at 185F. Good*The operator only sells precooked hot dogs and toquitos.

Observed boxes of food stored on the floor in the freezer and packages of food that had fallen on the floor in the freezer. Ensure all food items are stored at least 6 inches off the ground to prevent contamination.

Observed 3 compartment sink with go back items; cans and bottles being stored in the wash section of the sink. The sanitizer section had dirty dishes and food debris in the sink. Ensure 3 compartment sink is set up properly to ensure ice scoop; kitchen ware and beverage equipment are being cleaned and sanitized.

Observed mold like build up in ice machine. Ensure ice machine is cleaned on a regular schedule to prevent contamination.

The facility did not have sanitizer test strips on site. Ensure sanitizer test strips are being used to allow proper sanitization of equipment and prevent contamination.

Observed dishes in the hand sink. Ensure handsink is only used for handwashing to prevent contamination and allow proper handwashing. Dishes were removed from the handsink during inspection.

Observed push down faucet on the hand sink in the mens restroom that did not stay on when pushed. Ensure water runs for at least 15 seconds after pushing the faucet on to allow proper hand washing.

-Observed several chemicals being stored with food items in the back storage area.-Observed chemicals in unlabeled bottles.Ensure chemicals are stored and labeled properly to prevent food contamination and misuse of chemicals.

OBSERVATIONS:- Corn dog temperature at 120F. Manager advised it was put out at 12pm. Advised manager that food in hot holding must be held at 140F or hotter. If held at 140F or hotter it may be held hot indefinately. If using time as a control barrier; operator must maintain a written log to ensure the food is discarded at 4 hours. Food may not be held out of temperature over 4 hours.

OBSERVATIONS; RECOMMENDATIONS AND REQUIREMENTS:- Install a thermometer in the large open top deli case. Install in a conspicuous location and ensure temperature of refrigerator is maintaining food at 40F or less.- Repair or replace the unused TRUE one door refrigeration unit (near the front entrance).- Ensure that employees wash hands at the hand sink prior to handling dawning gloves and prior to performing any food handling activities.All refrigeration was at 40F or less (walk-in 39F; walk-in freezer 12F; upright deli cooler 39F).Hand sink was stocked and operational.
