Operator selling individual packages of chicken without labeling. Operator is keeping receipts from purchase; restaurant depo and east west market out of Sacramento. Product is purchased already bagged individually. Advised operator that labeling is required if not included from place of purchase for trace back purposes. Label must include store name; address and phone number and contents. Operator is not allowed to repackage under the existing permit and does not appear to be doing so. Advised operator to stamp dry bags and place purchased bags within his stamped bags so that product is clearly labeled.

No thermometers in 3-door TCS food display freezer and homestyle white freezer with chicken. Thermometers must be installed in a conspicuous location within the freezer. Corrected on-site.

OBSERVATIONS:- Observed some expired canned goods for sale on retail shelving. Ensure product is rotated/removed so that expired product is removed from sale. Immediately discard any dented; bulging or rusted cans.- Ensure that employee food items and personal items are stored separately; in a designated area away from customer items.- All product refrigeration observed was at or near temperature required by regulation (cooler 32F ambient).- Restroom clean and operational with hot and cold water; soap and paper towels stocked.
