Facility has not had employee(s) take and fail one of the recognized CFPM exams in the past year.No violations noted at time of inspection. Operator was prepping for catering event later today.Notes:-hand sinks stocked; observed operator wash hands; discussed no bare hand contact policy with no issues noted-walk in at 38F; veges at 39F; beef at 40F; freezer at 11.5F; all product frozen-food properly stored; good separation of foods-discussed cooling procedures; final cook temperatures; transport; hot and cold holding; labeling requirements; equipment cleaning; approved sources with no issues noted-sanitizer bucket at 200ppm quat; wiping cloths properly stored-thermometer available-restrooms clean and stocked-dumpster ok-no pest issues noted at time of inspection-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.Operator may wish to start manufacturing and bottling pepper sauce. Before production may begin; sumit to the health department a written procedure detailing ingredients and process for cooking and bottling. A HACCP plan may be required.
