Only person to take the test this year and pass it was Lora Kellogg.-All hand sinks properly stocked and used.-Freezer -2.7F.-Wiping cloth sanitizer at 300 quat.-Date labeling observed.-Glove use observed.-Three compartment sink ok.-Test stripes ok.-Freezer 6F.-Prep sink ok.-All items stored at least 6" off the ground.-All lights properly shielded.-All chemicals properly stored.

Do call health inspector when customers complain of food borne illness at facility.

Ice scoop stored on top of ice machine that needed some cleaning. Store ice scoop in separate; clean and sanitary container. **Violation corrected on site - scoop washed; rinsed and sanitized; and placed in ice bucket. Manager will review storage with employees.**

Freezer in bakery had growing amount of frozen condensate and evidence of leaking onto food product boxes during defrost cycle. Maintain unit to prevent potential contamination of food product. **The freezer in the back storage area also has this issue. Maintenance scheduled while on site. Discussed interim maintenance of regular scraping to prevent dripping with operator. Also discussed that food product that is contacted by any condensate should be discarded.**

The issue is not a problem for food safety but could become one if it grows. The main issue is if the condensation that is forming on the ceiling of the walk in melts during the defrost cycle and drips onto the food; the food should be considered contaminated and discarded. Manager will look into getting units maintained to ensure that no food safety issues occur. This needs to be addressed in any freezer unit that has the problem.
