Correct so rinse temperature reaches a minimum of 180 F for 15 seconds for glass washing.Use the 3 compartment sink (wash; rinse; sanitize) with 50 - 100 ppm chlorine sanitizer or quat amonia 200-400 ppm.Use single service glassware until glass washer is repaired.
