Observed ice build up on condenser line in back walk in used for beer. Clean walk in of ice and repair if leaking.

Observed sanitizer buckets without residual and wiping cloths stored on counter. Damp wiping cloths must be stored in sanitizer solution to prevent bacterial growth. Per operator; sanitizer buckets are changed once per 8 hour shift. Change sanitizer buckets as often as needed to maintain proper sanitizer residual (200-400ppm quat or 50-100ppm chlorine).
