    Thermometer missing in reach in storing half and half. Ensure all refrigeration and freezer units are stocked with a conspicuously placed thermometer in order to monitor unit temperature.

    Observed sanitizer buckets without residual and wiping cloths stored on counter. Damp wiping cloths must be stored in sanitizer solution to prevent bacterial growth. Per operator; sanitizer buckets are changed once per 8 hour shift. Change sanitizer buckets as often as needed to maintain proper sanitizer residual (200-400ppm quat or 50-100ppm chlorine).

    Notes:-hand sink stocked-reach in with half and half at 43F; dates current-speed guns clean-2 dishwashers; measured at 50 and 100ppm chlorine-ice scoops properly stored-food stored properly-chemicals labeled and properly stored-regular pest control by Ecolab - no pest issues noted at time of inspection-wall recently repainted - do repost alcohol advisory sign-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

Repair dishwasher to dispense sanitizer between 50-100 ppm Chlorine. Do label sanitizer container to it's proper contents to prevent misuse. * Corrected on site both items.
