Manager was clearly able to state when employees are restricted from work.
II. Handwashing/ Prevention of Hand Contamination (+)
Observed all hand sinks were appropriately stocked.
IV. Demonstration of Knowledge (+)
Persons in charge demonstrated knowledge by appropriately answering food safety quesetions related to the operation of the facility.
V. Food From An Approved Source (+)
The facility's food supplier is MBM.
VI. Food Thawing (+)
Person in charge stated that food is almost always thawed inside the walk in cooler.
VII. Date Marking (+)
Observed foods were properly date marked.
VIII. Cooking, Reheating, Cooling, Hot & Cold Holding
Manager was aware of the proper temperatures to reheat food. All temperatures were found to be in compliance at the time of the inspection.

Person in charge was able to accurately describe how to calibrate a thermometer. In addition, a thermometer was readily available.

Cooking, Reheating, Cooling, Hot and Cold Holding (-) Observed tomatoes at 55 F by the grill. PIC voluntarily discarded at time of inspection. All hot holding was acceptable at 135 or above.
Date Marking/Time as a Public Health Control (-) Observed undated turkey in the walk in cooler. PIC voluntarily discarded at time of inspection.
Protections from contamination (+) Raw animal foods are separated from each other during storage, preparation, holding, and display. Foods are protected from physical and environmental contamination during storage, preparation, and display.
