VII.Cooking,Reheating,Cooling, Hot and Cold holding
Observed rice and egg rolls cooling improperly. Discussed with management about putting items in smaller containers. Not cooling foods properly can lead to bacterial growth which can lead to illness. Cooling log given to manager at time of inspection. Ensure log is used to track cooling temperatures.

Observed several items properly thawing in walk in cooler under refrigeration.

Inspection prompted due to complaint of patron eating metal pieces in fried rice. At time of inspection I did not see any obvious way metal pieces could be getting into the fried rice. Owner of facility walked me through the process of making the fried rice and did not observe any point where the rice may become contaminated. Compliant could not be confirmed or denied at time of inspection. PIC Hong.
