Potentially hazardous cold foods not held at proper temperatures. Correction: Potentially hazardous cold foods shall be held at 41 degrees F or lower. Comments: 6 cooler with pre packaged lunches encased in individual plastic containers are not maintained at 41 degrees. Temped at 46-47 degree. Lunches are delivered between 8am - 8:45am Lunches are served at 11am and 12pm 2 small Ice packs are not enough to maintain at 41 degrees for length of time. 7/1/14 Store in refrigerator or surmerged in ice.1. Pre packaged lunches were stored in several coolers that temped at 64 degrees. The internal temperatures were around 71 degrees in all the coolers. No ice packs were provided large amountof food be held. Done 2. Obseved a cooler lid with potentially hazadous food unable to close because lunches were stacked to high in the cooler. Done Discard indivdual carts of milk and deil meat sandwiches. Poetentially hazardous food temperatures must be maintained at 41 degrees from transporting to the office were they are stored until transported to camp ground location were lunches will be distributred. Cold and hot holding equipment used to store potentially hazardous food is not equipped with at least one thermometer that is located to allow easy viewing of the temperature display. Correction: Cold or hot holding equipment used for potentially hazardous foods shall be designed to include and shall be equipped with at least 1 temperature measuring device that is located to allow for easy viewing. Comments: Provide thermometers for all the cooler with potentially hazadous food stored in them.
