- Critical: Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed raw eggs being stored over ready to eat foods in walk in cooler.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. Discussed with operator potential for cross contamination and eggs were placed below ready to eat foods.
- Food storage containers are not properly labeled. Observed large bin of flour without proper labeling.
Working containers holding food or food ingredients that are removed from their original packages shall be identified with the common name of the food, except containers holding food that are readily and unmistakably recognized. Label bulk ingredients to prevent misuse.
- Critical: Observed food in contact with an unclean surface. Observed soiled dishes being stored on top of rack on garbage can.
To prevent contamination, food shall only contact the surfaces of cleaned and sanitized equipment and utensils or single-use and/or single-service articles. Discontinue storing dishes awaiting cleaning on garbage as this is source of additional contamination.
- Cutting or piercing parts of can openers are not removable for cleaning and for replacement. Observed build up and wear on can opener.
To prevent food borne illness, cutting or piercing parts of can openers shall be removable for cleaning and replacement. Discussed with operator need for cleaning and sharpening.
- The physical facilities are not being maintained in good repair. Observed missing ceiling tiles in the ware washing area above the dish rack.
The physical facilities shall be maintained in good repair. Replace missing tiles to prevent contamination of clean items underneath.
- Observed a build-up of dirt and debris. Observed build up of debris on ceiling fan above 3 comp sink.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Clean ceiling fan to prevent possible contamination of clean items below.
