Observed three drawer reach in cooler under cookline holding ambient air temperature of 50 degrees fahrenheit. Upon callback 4-26-11, observed reach in cooler holding ambient air temperature of 48 degrees fahrenheit. Observed no potentially hazardous foods in reach in cooler at time of inspection.
  • Violation: 18-04-1 Observed old labels stuck to food containers after cleaning.
  • Critical - Violation: 20A-10-1 Dishmachine chlorine sanitizer not at proper minimum strength. Observed both a chlorine sanitizer and quaternary sanitizer hooked up to dishwash machine. Tested for both sanitizers with both establishment's test strips and inspectors test strips and did not get a proper sanitizer strength at all tests. Establishment must use three compartment sink to wash rinse and sanitize. Upon callback , establishment using three compartment sink, supplies on order for dishwash machine.

Items were moved to reach in cooler capable of maintaining 41 degrees fahrenheit . All other products in cooler are non potentially hazardous.
  • Critical - Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Observed potatos, sausage patties,sausage links, and shell eggs held above 41 degrees fahrenheit in reach in drawer type cooler under cookline. Foods originally kept in walk in cooler and were moved to drawer reach in cooler at approximately 7:00 a.m. at day of inspection. Foods were moved to walk in cooler.
  • Observed wall soiled with accumulated food debris-dishwash area.
  • Critical - Shell eggs held in a unit maintaining an ambient air temperature greater than 45 degrees Fahrenheit. Observed shell eggs held in reach in cooler,under cookline , holding ambient air temperature of 50 degrees fahrenheit. Eggs were in reach in cooler since 7 a.m. . Eggs were then placed back into walk in cooler at 9:30 a.m. during time of inspection.
