  • Basic - Single-service items for customer self-service not properly protected to prevent contamination. Straws at front counter. Moved behind counter. **Corrected On-Site**
  • Basic - Wet wiping cloth not stored in sanitizing solution between uses. On cutting board. **Corrected On-Site**
  • High Priority - Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. 15 ppm.
  • High Priority - Displayed food not properly protected from contamination. Cake/brownie samples for customer self service. Put in display case. **Corrected On-Site**
  • Intermediate - Commercially processed ready-to-eat, potentially hazardous (time/temperature control for safety) food opened and held more than 24 hours not properly date marked after opening. Opened chunk of deli meat, in reach in cooler across from make table cooler.
  • Intermediate - Handwash sink used for purposes other than handwashing. Storing wet wiping cloth, behind front counter. Corrective action - moved.
  • Intermediate - Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink. Have pool test strips, need chlorine strips that have ability to test higher level of chlorine.

Egg and cheese bagels at front counter. Corrective action - given time control plan, explained procedure. Operator currently only leaves out for 2 hours before discarding or eating them as employee food.
