Callback inspection: nothing stored in frigidaire freezer in back room. Temperature checks in reach in cooler resulted in identification of reach in cooler not maintaining 41F or below. Air temperature of 53F [thermometer present in holding unit not accurate - reading 41F yet inspector's thermometer reading air temperature of 53F andd TCS foods at 48-53F].
  • Critical - Violation: 05 Observed no thermometer in coldline at window or refrigerator at server station or refrigeration in the back room. Callback inspection: no thermometer in back room refrigerator and refrigerator at server station.

Make table above: cheese slices, ham and cooked veg at 53F. As informed by cook, all products were placed in reach in cooler and make table at 6am - stored 3 hours. Transferred to walk in cooler for cooling to 41F. Reach in cooler at air temperature of 53F [thermometer inside not accurate - reading 41F].
