  • Basic - Interior of microwave soiled with encrusted food debris. Observed soiled interior ceilings in both microwaves above kitchen prep line.
  • Basic - Interior of oven has heavy accumulation of black substance/grease/food debris. Observed at both the gas range oven and the baking oven across from rear door.
  • Basic - No conspicuously located ambient air temperature thermometer in holding unit. Observed no ambient air thermometer in black "Black and Decker" mini fridge located at end of cookline.
  • High Priority - Cooked meat/poultry cold held at greater than 41 degrees Fahrenheit. Observed make station set up at end of cookline with items on ice for quick use. Employee stated on weekdays this area is usually set up around 7:30am meaning at time of inspection, items were out less than 4 hours. Ice was refreshed at inspector's request, but were put back in walk-in cooler about 20-30 minutes later at the end of breakfast service. Observed the following items above 41°F: diced sausage 47°F, cooked diced chicken 52°F.

Observed one employee place bowl under handwash sink faucet to obtain water for product he was mixing. Observed another employee rinse/wash whole uncooked red potatoes at same handwash sink.
