- Basic - Equipment in poor repair. Make table cooler near hand sink by fryers holding time/temperature controlled for safety foods at 50-51°. Corrective action - Moved product to functioning cooler, breaker was tripped. Reset breaker. Cooler started cooling, product will be returned once cooler reaches ambient temperature of 41°.
- High Priority - All potentially hazardous (time/temperature control for safety) foods in reach-in cooler cold held at greater than 41 degrees Fahrenheit. Cheddar 50°. Cheddar 51° in make table reach in cooler next to hand sink by fryers. Corrective action - Moved all product in cooler to functioning cooler. Cooler had tripped breaker turning unit off, reset breaker. Product will be moved back to cooler once proper temperature is reached.
- High Priority - Food-contact surfaces sanitized with a quaternary ammonium solution not exposed to the sanitizer solution for at least 30 seconds. Do not use equipment/utensils not properly sanitized.
