  • Critical - Cooked potentially hazardous food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. 6 hrs. and 20 min. has passed. 64-73 degrees on pans of chicken in reach in cooler. Person in charge instructed to immediately remove chocken and place in open bags in deep ice bath in triple sink. Temperatures monitoring is required! Corrected On Site.
  • Critical - Cooked potentially hazardous food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Foil pans of chicken and pork in reach in tightly covered found at 95 degrees- For pick up this afternoon. Pans were removed and placed in oven to reheat to 165 degrees F., then hot hold until pick up. Corrected On Site.
  • Critical - Food thermometers not accurate within +/- 2 degrees Fahrenheit.
  • Critical - Hand wash sink lacking proper hand drying provisions. Dispenser broken. Corrected On Site with roll of paper towels.
  • Critical - Inadequate number/capacity of cold holding units to maintain potentially hazardous food at proper temperatures. see comments
  • Critical - No conspicuously located thermometer in Traulson cold holding unit or prep top unit.
  • Critical - Observed an open beverage container on a food preparation table or over/next to clean equipment/utensils.

  • Critical - Observed food being cooled by nonapproved method, 7 deep stacked trays of chicken cooked today 6 a.m. is 65-73 degrees in reach in cooler. Corrective action taken.
  • Observed nonfood-grade containers used for food storage, raw rice in hardware store bucket.
  • Critical - Observed soiled reach-in cooler gaskets, silver 2 door Traulson cooler and 2 door freezer and prep top unit.
