  • Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Observed 6 employees on staff at time of inspection with no Certified Food Manager present. Observed Manager Matt was person in charge at time of inspection but did not have a certified food manager certificate. He said he is being scheduled to complete the Food Manager certificate exam. Observed 5 CFM certificates in book in office: Shameka, Jearmey, Ronnie, Angelique and Thomas. Jearmey worked the day shift and left before the inspection. Shameka and Thomas were not on staff at time of inspection and Ronnie and Angelique are no longer employed at establishment. This violation must be corrected by February 4, 2013. **Warning**

  • Basic - In-use utensil in nonpotentially hazardous food not stored with handle above top of food within a closed container. Observed tongs laying in lemon slices at front counter service area.
  • Basic - Soiled reach-in cooler gaskets. All reach in coolers in kitchen below prep tables.
  • Basic - Walk-in cooler gaskets soiled with slimy/mold-like build-up.
  • High Priority - Employee washed hands with cold water. Observed employee wash hands at handwash sink where hot water has been shut off/locked out. (Handwash sink near drive thru and in front of office) Manager Shameka informed me that there have been customer complaints about the sink water being too hot so the GM shut off the water at this handwash sink to try and help resolve this issue. Unfortunately, this sink is still designated as a handwash sink, is supplied as a handwash sink and is being used by employees. Inspector observed 2 other handwash sinks, one near 3 compartment sink and one near front counter, both supplied with hot water and hand washing supplies and available for employee use.
