I'm not sure if this can be counted as a waterfall, but it's on a list of waterfalls in North Carolina. This one is appropriately called Sliding Rock, and it's loads of fun -- especially when there's been a heavy rain. It was kind of sparse due to our drought when we were there.

I hear ya Nomadicus! It would have been more fun a few years ago for me too but I might give it a go if there was enough water flowing and there was a medic nearby.
