Neither my husband or I are big "makeover" fans when it comes to turkey. We usually eat it alongside the other leftovers just by itself. But this year I had lots of left over turkey....so, I made tortilla soup last night and added some leftover white meat turkey - I was worried it would taste too turkey-ish, but the other flavors were strong enough to compensate. I used up the open box of chicken broth in the fridge, but now I'm wishing I'd made more - it was good!

I take left over dressing and form into patties (think hamburger size) and fry them up with a little oil until crispy on the outside.

Layer the turkey slices over the patty, and cover in gravy. Don't ask me why, but my guys like this BETTER than T-Day dinner!

They also like the "dressing patties" with eggs on the morning.

We love just plain straight leftovers and sandwiches, but we did have a great batch of Turkey Tetrazzini....spaghetti, turkey, cream, mushrooms, butter, and cheese. How can you do better than that?
We'll have the same recipe with leftover ham after Christmas.

By the time we have our fill of turkey, stuffing and cranberry sandwiches, there is only enough left for soup, usually.

My neighbor makes turkey croquettes. she uses leftover turkey, stuffing, mashed potatoes, cranberries and this year she added leftover green bean casserole, 2 eggs mixed all together and formed little logs and baked them on a cookie sheet. Her family goes crazy for them.

Wife made two 10in turkey pot pies yesterday that will last most of the week.

Left over turkey
Left over Gravy
Carrots
Pearl onions
Peas

Top with left over fresh made cranberry sauce.
