More of the same as the T-day meal. I loved the leftovers just as they were, other than being heated again. After all, that was the only time each year we had it at home. (Back then, some New England restaurants did serve roast turkey dinners all year.)

I really like the cold turkey sandwich for lunch the next day. Sliced sourdough bread (or bun), mayo, lettuce, and a little onion powder on the turkey, sliced thin. We will also use some leftover meat, mostly dark, in gravy over mashed potatoes. Unfortunately this year that probably won't happen. With our usual 12 people, I always get a 23 lb. bird. This year, however, the largest available was barely 20, and I had to dig to find that one. I don't expect to have much left over.

Either turkey sandwich with mayo or turkey sandwich with homemade cranberry sauce.
Hot turkey sandwich with gravy.
Stuffing with gravy.

Things my mother did with leftover turkey - Turkey Tetrazzini, Waldorf Salad with Turkey, (walnuts, grapes, apples, mayo, cranberries) Turkey Sandwiches - with cranberry sauce and stuffing.

The Turkey Tetrazzini was casserole a lot like this, but no red peppers and a crusty Pepperidge Farm Stuffing topping.

Keep it simple, have a repeat dinner, & then cold sandwiches. I might make turkey broth to freeze to cook rice with later on.

My dad used to make a turkey, cranberry and dressing sandwich on dinner rolls! LOL

My daughter always gets the bones with a generous amount of meat on them for turkey wild rice soup. There won't be any leftovers here this year. DH will go elk hunting the next day so I'm sending it all home with the kids.
