    Observation: Foods not date marked in the 3 door cooler. Person in charge date marked the items.

    Observation: Spray bottles not labeled with contents inside. Person in charge labeled the bottles.
  • Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
    Observation: No thermometer present in the coke cooler. Person in charge supplies a thermometer.

    Observation: Thermometers in coolers of the kitchen are not accurately reading cold temperatures.

    Observation: Cooked egg patty(105F) and sausage links(116F) hot holding in breakfast area were not maintained at 135F and above. Foods discarded by employee.

    Observation: Debris build up on blade of table mounted can opener. Cleaned.

    Observation: Debris build up on trays under the broiler grill. Standing water left sitting inside of both steamer units.

    Observation: Steak and burgers on the dinner menu are missing a disclosure. Items are served cooked to order.

    Observation: Observed multiple water damaged ceiling tiles in the kitchen area.

    Observation: Small packets of cream cheese(68F), strawberry cream cheese(54F) and butter(68F) were not being held at 41F and below. Packets were all labeled as "Keep refrigerated" Employee moved them into a cooler.
  • Using a handwashing sink- operation and maintenance
    Observation: Bar hand sink has dishes stored in basin. Cleaned.
  • Plumbing system maintained in good repair
    Observation: Drips observed from hand sinks in the unused men's and women's kitchen restrooms. Leak observed from left faucet of the three compartment sink.

    Observation: Coke cooler is missing a thermometer.
  • Sanitization methods - hot water, chemical
    Observation: High temperature sanitizing dish machine was not able to reach minimum of 160F on final rinse. Employee was able to adjust the thermostat on the booster heater and fix the temperature.
  • Handwashing signage
    Observation: No hand washing reminder sign posted at bar hand sink. Corrected.
  • Outer openings are protected
    Observation: Gaps observed along the bottom and top of the dock delivery door in the back of the kitchen.
