- Material characteristics of non-food contact surfaces
Observation: Using cardboard to lin speed rack. All surfaces exposed to food must be cleanable and nonabsorbent. Remove cardboard and replace with cleanable material.
- Cutting surfaces maintained
Observation: Small cutting board at front counter is scored and stained. All food contact surfaces must be smooth and easily cleanable. Replace.
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation: Some food debris and water accumulation in reach-in coolers. Clean and maintain cleaning at frequency to prevent future build-up.
- Cleanability of floors, walls, and ceilings
Observation: 1) Flooring throughout establishment and walk-in cooler is no longer easily cleanable. Replace flooring with commercial tiling. 2)Under hand sink by drive up is exposed wall board. All walls must be non absorbent and easily cleanable. Paint with 2 coats of light colored paint or install a cleanable surface such as FRP. 3) Sink/wall juncture in RR must be removed and replaced to ensure it is easily cleanable.
- Eating, drinking, or using tobacco
Observation: Can of Mt Dew on counter by drive up window. Employee drinks must be in covered containers when in food prep areas. Suggest using cup with lid or bottles.
- Sponges not used on clean or in use food contact surfaces
Observation: Sponges in establishment back by dish. Sponges are not an approved food contact surface. Discard sponges.
- Equipment location, installation, repair, and adjustment
Observation: Duct tape is on the candy coaters. All equipment is required to be maintained in accordance with manufacture and be cleanable. Duct tape is not a cleanable surface. Remove

Observation: Food employee has a long beard. All hair must be restrained. Cut bread or where bead restraint.

1) Tiling is missing through out the kitchen. Owner states flooring to be replaced this fall. All flooring must be easily cleanable and nonabsorbent. 2) Cove base is required at wall/floor junctures. When flooring is replaced, cove base must be installed.

- When to wash
No hot water was available so employees were using hand sanitizer for cleaning their hands. Hand sanitizer does not replace hand washing. All employees must wash their hands in between tasks and if hands are contaminated.

No soap was available at front hand sink. All hand sinks must be provided soap at all times for proper hand washing. Maintain soap at hand sink as required.
- Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
Sloppy joe meat dated 4/29/13 was observed in walk-in cooler. All PHF must be discarded after 7 days. Product discarded during inspection. CORRECTED.

Hot dogs in reach-in grill cooler were not dated. All potentially hazardous food (PHF) must be dated and then used in 7 days or discarded. Date products as needed.
