    Observation:MEAT DEPARTMENT: SHELL STOCK (oysters) tags/labels not attached to the container in the retail case. Recorded labels not dated with the last date of sale from the container. Record keeping system for tags not in chronological order, they are all together in one container. Inspector explained record keeping procedures to the managers today. Recheck at the next inspectiion

    Observation: MEAT DEPARTMENT: Deli meats, cooked meats not dated. Inspector explained the proper dating procedures to the managers today. Recheck at the next inspection

  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: Cut watermelon, other melons and produce were exceeding 41 degrees in the produce cooler. Melons were ranging from 44-47 degrees at the center. Items were prepared on 7-31-15 and 8-1-15. Discussed the importance of keeping cut produce under 41 degrees. Suggested taking off bar mesh to allow for better airflow. By 8-7-15, send temperature logs for four times a day for three days regarding the temperatures in cut produce to the health department.
  • Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
    Observation: There were not thermometers placed at equal distances apart in the self-serve display coolers.
  • Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
    Observation: The handles and sliding doors in the meat department were soiled. The fan guards in the walk-in coolers were dusty.

    Observation: The rear receiving door was not insect/rodent tight.

    Observation: The cutting boards in the meat department and produce were in bad repair.

    Observation: There were several dented cans throughout the aisles. Discussed with the PIC the dangers of dented cans.

What do they put in their chicken cordon blue! We purchased two the other day and after baking them we found they were stuff with what looked like ham rind. NO flavor at all so don't buy them. We were very disappointed!
