Observation:Anyone coming into the kitchen must wash hands, before handling itmes for food or food service. Has food service for all meals.
- Established procedures for responding to vomiting and diarrheal events
Observation:Need to review and formalize plan for cleanup after V&D events, given more examples for consult, suggest having bucket with all supplies necessary for quick response.
- Posting inspection reports
Observation:Must post most recent inspection within public view.
- Posting of a valid license
Observation:Must post current license within public view.
- Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
Observation:Has open bag of pepperoni with date of 9 days ago, discarding now.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation:Dishmachine with no detectible level of sanitizer, bucket empty. Changed and now at 50 ppm, monitor level for when to change and test with test strip frequently to ensure is getting proper sanitization.
- Miscellaneous sources of contamination
Observation:Along serving line must protect the front edge of the food container from contamination by the consumers, ie foil, plastic wrap, or lid, ie cover half the bowl with wrap.
- Certified Food Protection Manager with management and supervisory responsibility employed by the establishment
Observation:Someone on staff needs to attend Certified Food Protection Manager training within next 6 months. Given list of training options.
- Cleanability of floors, walls, and ceilings
Observation:Peeling paint in dishmachine room above the scrub sink, has work order for it to be repaired.
- Light bulbs, protective shielding
Observation:Light in one freezer has a detached shield, either repair shield or provide a shatter resistant bulb.
