Observation:Deli - observed bag of hash browns at room temperature, food was 55 degrees. Discussed keeping frozen food frozen, hash was discarded, corrected on site.
- PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding
Observation:Deli - observed gravies in hot holding unit at 105 to 109 degrees. Manager stated that the gravies are partially reheated then placed in the warmer. Discussed reheating procedures, gravies discarded, corrected on site.

Observation:Meat - observed raw ground pork stored with chicken in walk-in cooler, corrected on site.

Observation:Deli - observed employee place a bag of hash browns in direct contact with sausage and bacon in grill prep cooler, removed, discarded. Produce - observed celery, parsley and other unpackaged vegetables in contact with soiled surfaces (mirror glass) and under filters that had visible mold deposits. Bakery - observed ice buildup on boxes in walk-in freezer.
