    Observation: can of creamed corn dented - placed in trash can during inspection.
  • Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
    Observation: cooler doors not clean to sight or touch, floor under working containers of cracker crumbs greasy, working containers of cracker crumbs greasy to sight and touch.
  • Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
    Observation: roasted chicken in deli cooler not marked as to date of preparation. Corrected during inspection.
  • PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
    Observation: baked chicken legs at 124 - 129 degrees. Removed to steamer to reheat to 135 degrees for hot holding.
  • Food storage - preventing contamination from the premises
    Observation: bin of cracker crumbs in kitchen with no lid.
  • Air drying of equipment and utensils
    Observation: pans not allowed to air dry (wet stacking). Separated at time of inspection.
